Spicy Turkey Stew

A happy accident. I love when a thrown-together mess of stuff turns into a really good dinner.

OK, so here we go:

Two split turkey breasts or 3 to 4 split chicken breasts, cubed up. This would be good with pork, too.

One can Rotel.

One large can chopped mild green chilies.

One can Kuhner's black beans, cumin spiced.

One package fresh mushrooms.

One can black olives. chopped up a bit.

Half a package of White Chicken Chili season mix.

Half a jar of Cheez Wiz.

Plop all that into the crock pot and cook about 4 hours on high, 6 or 7 on low. Stir it up and serve over rice or as is. Meets housemate approval test   :)

There IS such a thing as Free Lunch!

I don't remember if I have mentioned the fact that I work for the Residency Clinic  here in the Big RC (as my ol' buddy Darryl calls it). We get newly-minted, freshly graduated doctors in each July and they are with us for the next three years, working under an attending physician. Just to make sure they are safe to send out into the big bad world on their own to practice.

Being as this is a teaching environment, all of the doctors in the clinic have a mandatory lunch meeting every day. Since they cannot leave for lunch, the hospital brings lunch to them. Whatever is left over is up for grabs. I have figured out if I take my lunch a little later in the day (which I prefer, anyway), I can almost always get first choice of some prime leftovers!

Can't argue with free lunch!

Today's festive feast came from Chili's


 A fajita pita with some very spicy black beans. I ate the fajitas and left the pita.

Then Jennifer sent a picture of the birthday cuppy-cakes she got today. Her birthday was actually a few weeks ago (same day as Elvis' birthday!) but our girl April busted out the finest cake mix that Family Thrift had to offer and baked up some oh-so-yummie looking snacks for our birthday grrrl.


I wish I was there to share!

Anyway, I just wanted to clarify why I eat so much crap-ola for lunch. It's FREE!
